{"id":3527,"date":"2023-04-18T16:21:46","date_gmt":"2023-04-18T14:21:46","guid":{"rendered":"https:\/\/ctm.studiors.cloud\/?p=3527"},"modified":"2025-10-31T13:15:41","modified_gmt":"2025-10-31T12:15:41","slug":"omelette-al-tartufo-nero","status":"publish","type":"post","link":"https:\/\/www.centrotartufimolise.com\/en\/omelette-al-tartufo-nero\/","title":{"rendered":"Black truffle omelette"},"content":{"rendered":"<p><strong>Ingredients (serves 5)<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>50 g fresh black summer truffle<\/li>\n\n\n\n<li>15 fresh eggs<\/li>\n\n\n\n<li>Butter<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>Pepper to taste<\/li>\n<\/ul>\n\n\n\n<p><strong>Preparation<\/strong><\/p>\n\n\n\n<p>24 hours before: Place a truffle of about 50 g with 15 fresh eggs in an airtight container and leave it closed for at least one night. <\/p>\n\n\n\n<p>One hour before serving: crack the eggs into a bowl, grate a third of the truffle, add salt and pepper and whisk the mixture. Let it rest at room temperature. <\/p>\n\n\n\n<p>A few minutes before cooking: from the remaining two-thirds of the truffle, dice half and slice the other half using a truffle slicer.<\/p>\n\n\n\n<p>In a pan, heat a knob of butter over low heat, being careful not to brown it. Pour the mixture into the hot pan and use a spatula to form an omelette, bringing the edges toward the center of the pan.<\/p>\n\n\n\n<p>Add the diced truffles and fold the omelette into a roll that encloses the filling. Cook for a few more minutes over low heat.
